Van Linh Women’s Dry Noodle Production Cooperative—led by Director Trieu Thi Chuyen alongside her sisters Trieu Thi Son and Trieu San San—is the leading steward of Lang Son’s iconic Cao Khô (artisanal dry rice noodle) heritage. Rooted in Pho Cu village since 1945 among the Nung and Tay indigenous mountain communities, the craft relies on native Sa Mơ and Đoàn Kết mountain rice varieties. Evolving from arduous manual stone-milling to semi-mechanized production with state support in 1999, the community formed a collaborative in 2015 and officially established the Women’s Cooperative in 2019. Combining custom granite millstones, natural botanical infusions (Bo Khai wild leaves, Magenta Cam leaves, and Gac fruit), and a strict 10-step double sun-drying methodology, the cooperative yields silky, resilient noodles that resist crumbling during prolonged cooking.
